What a rigging mod is

Rigging is the animation term for building a skeleton of bones and joints that deform a mesh. Every Minecraft model already has an internal rig; a rigging mod exposes that rig to you in-game so you can rotate joints, keyframe motion and pose scenes. Without one, you're stuck with the four vanilla animations Mojang ships.

The leading rigging mod: Rig Mod

Rig Mod is the flagship Fabric rigging mod for Minecraft 1.21. It gives full bone control for the player model, an in-world keyframe timeline, a camera rig for cinematic shots and a pose library for saving and re-applying poses across scenes. Rigging mod vs animation resource pack

Resource packs can retexture and even swap models, but they can't reach into the animation system to add new keyframes. A rigging mod runs at the animation layer, which is why it can do things resource packs simply can't.

Installing a rigging mod

Install Fabric Loader for your Minecraft version, drop the rigging mod's .jar in .minecraft/mods, and launch the Fabric profile. Bind the rigging UI to a hotkey in Controls, hop into a world, and start posing.
